I guess this may prove that I am kinda odd. ;) I have another recipe to put on here as I said I was going to do this each week. Anyway, Karen took step by step pictures of me making this one. So, I thought what the heck, I'll just put 'em all on here. lol. Well, here goes... Oh, and I don't really have a name for these things, so I guess I can just make one up. Hmmm... I think I'll name them mexican breakfast biscuits. There ya go. That'll work. :)
MEXICAN BREAKFAST BISCUITS:
1 lb. ground meat (I use turkey, but whatever you like will do)
taco seasoning (you can just use a packet. I have a big thing of it, so I just guessed how much to use.)
1 c. water
3 c. self-rising flour
1 1/2 c. milk
1/3 c. oil
3 tbsp. lawry's garlic powder
3 eggs, beaten
1 c. shredded mexican cheese
Brown meat and drain (unless you use ground turkey, then there is no fat), add taco seasoning and water and simmer. Spray a muffin pan with some pam and set aside. While the meat simmers, make the biscuit dough by mixing the flour, milk, oil, and garlic powder together with a spoon. Sprinkle some flour on the counter, pour biscuit mixture onto the floured counter, sprinkle just a little more flour on top of the biscuit dough to keep your hands from sticking to it, and flatten it out. Use a biscuit cutter or a drinking glass dipped into some flour to cut out the biscuits. Press each biscuit out in your hand to flatten it a little more. Put flattened dough into each muffin hole. Then, fill each of them with a spoon full of the meat mixture, pour a little of egg on each, and top with cheese. Cook in the oven for 25 minutes at 350 degrees. Yum, Yum!!!
Now, of course, you can use canned biscuits, which would be much easier, but I didn't have any. Therefore, I just made homemade biscuits. This is also very, very good with sausage instead of the taco seasoned meat. But there again, I didn't have any sausage, so I improvised. I realize I made this a bit more difficult than it has to be, but I didn't want to go to the store. It was fun making it from scratch though. I do love to bake stuff. :)
I made some homemade brownies from scratch the other day that were just freakin' awesome. I'm going to make those again this week and put that recipe on here too. I would love to own a bakery and make stuff like this all day.
Oh, one more thing...
You can make the biscuits the same way as told above, just leave out the garlic powder. They are great for whenever you just want a biscuit. Three simple ingredients and it takes all of 5 minutes to throw it together. I like to make them when I make sausage gravy, which is also one of my faves. :) And the biscuits with the garlic powder, made as just regular biscuits are really good too. Karen said they remind her of Red Lobster's cheddar bay biscuits. Good stuff, good stuff. :)

Those do look yummy! I've been trying to find a good gluten-free biscuit recipe, but so far my attempts have not been great (I went gluten-free just when I had found a perfect organic biscuit recipe! Go figure!). I need to buy some more GF flours and just experiment more. I love cooking from scratch too, you can make things taste the way you want them!! And sausage gravy and biscuits is my FAVE!!! :)
Oh yeah - the Red lobster biscuits... so yum. I used to make those all the time with bisquick biscuits, shredded cheddar, and garlic powder/butter. So good and so easy. I miss them!!! lol.

Those look great, I'll have to try them. Petra, rice flour works as a great substitute for wheat flour. I have tried it on cookie recipes, gravy, etc.
Tim - yeah, I still haven't tried rice flour, just some multi-purpose flour that works 'okay', but not great. I use corn starch in soups, which works great, and haven't made gravy, but figured the corn starch would work well in that as well.
Tonya - forgot to mention that I like the step-by-step photos... it's like recipes on The Pioneer Woman's blog!!! :)
